Executive Chef Michael mayer

Executive Chef Michael Mayer is an experienced culinary leader with a passion for thoughtful techniques and exceptional ingredients. To prepare for his role at La Fuga, he immersed himself in the time-honored traditions of Italian cooking, devoting himself to recipes passed down from generation to generation along with innovative, contemporary Italian masters. The result is at once modern and classic: an exploration of the lengthy Italian sea coast that makes clever use of local Florida ingredients.   

Chef Mayer also oversees all food and beverage outlets at Kimpton Shorebreak and Westin Fort Lauderdale Beach Resort, a position he has proudly held since 2016. Prior to leading the teams here, he served as executive chef  for a variety of hotels, including in Austin, TX and  Vail Colorado. He began his career as a short-order line cook in the Midwest, and he knew from the start that he would pursue a culinary career.
